Black Locust Flowers

Robinia pseudoacacia

Illustration: Black locust (Robinia pseudoacacia) white flower clusters

Identification: Tree with deeply furrowed bark and paired thorns; hanging clusters of fragrant WHITE pea-like flowers in late spring.

Dangerous look-alikes: ONLY THE FLOWERS are edible. Bark, seeds, leaves, and roots are TOXIC (robin). Do not confuse with other flowering trees — confirm the pea-like flower shape and paired thorns.

Edible parts: Flower clusters only.

Season and habitat: Late spring bloom, 1–2 weeks. Widespread planted and naturalized; fencerows, disturbed ground.

Preparation: Dip clusters in batter and fry as fritters — fragrant and sweet. Strip individual flowers for salads. Never eat any other part.
