Butternut (White Walnut)

Juglans cinerea

Illustration: Butternut (Juglans cinerea) oblong husks

Identification: Tree with grey furrowed bark; pinnate leaves; OBLONG sticky green husks (vs. round on black walnut). Rich oily nuts.

Dangerous look-alikes: Black walnut — also edible; husk shape distinguishes them. No toxic confusion.

Edible parts: Nuts.

Season and habitat: Fall. Rich moist woods; increasingly rare (butternut canker disease).

Preparation: Husk promptly (gloves), wash, cure, crack — buttery, mild, excellent. Leave plenty for wildlife; the species is declining.
