Young Pokeweed vs. Mature Pokeweed

Mature pokeweed — stems, leaves, roots, and berries increasingly toxic with age.

The tell: Edible stage: young spring shoots UNDER 8 inches, all green, no red or purple color anywhere. Mature: tall stalks with magenta-red stems and dark berry clusters. Toxicity rises as the plant ages.

Rule: Any red or purple on the shoot, or over 8 inches — leave it.
